Super Quick and Healthy Toddler Breakfast Idea #1

Breakfast can be a challenging meal. Especially if your children are starving and you haven't had your coffee. Pretty soon you are putting orange juice in the dogs water bowl and giving your daughter an iPhone for breakfast.

I leave the house before Olivia wakes up. Dan has to feed her breakfast. I was very worried at first. This is the guy who decided to cook dinner for me in college once and made spaghettios mixed with canned peas. It was from his "a man, a can, a plan" cookbook. 

He would also eat rice and pasta for dinner. You know, variety. He's come a long way, but it never hurts to make breakfast an easy meal. Especially when both parents have to be at work early. 

So, for the next 6 or so Sundays, I'm going to share some incredibly quick (we're talking seconds), healthy ideas for toddler breakfasts. I realize 'healthy' is relative, but we like using real ingredients, and minimizing processed foods. Bonus points for a veggie.

The first one, and the most popular around here, are eggs in a mug. What?

My dad, the egg connoisseur, just taught me this. He's been holding back my whole life. 

Olivia is obsessed with scrambled eggs. But it takes a few minutes to make them, not to mention cleaning the hot pan. 

Just crack 2 eggs in a mug. Scramble the egg with a fork. Microwave for 1- 1.5 minutes, scrambling every thirty seconds. (Just don't over cook them).

We add a slice of cheese to the raw eggs before microwaving because Olivia loves cheese eggs. 

If you are feeling crazy, add some leftover meat or veggies from last night's dinner. But really, that's a little too crazy for us in the mornings. 

At least she's not eating an iPhone.

  1. What the what?? Scrambled eggs in the MICROWAVE! This could be a breakfast game changer for us. Olive also loves cheesey scrambled eggs, but I'm usually not up for cooking that early. She thanks you in advance for this breakfast idea. Looking forward to this series :)

    1. Right? When my dad told me I was like, why have you been holding out on me!!

      I'm sure cooked in butter eggs are better, but if you don't over cook them they still taste great. Dan only make his eggs this way now, too lazy haha.

    1. Right? It's totally the lazy way. But also the only way Olivia gets eggs in the morning.

  4. We've done this before (although I think it was for myself and not the kids ;) )! Love the dinner story! The first time Chris cooked in college he called his mom because he made "mac n cheese soup" and didn't know what he did wrong. He missed the whole "drain the pasta" part!

    1. Hahaha this made me laugh out loud! I'm pretty sure dan screwed up a microwave pasta thing that way before.

      If microwave eggs are good enough for you, they're good enough for the littles ;) although you might have to microwave a few to make enough for the fam.
